gemini.circumlunar.space's certificate has changed, so it's time for a TOFU post!
This post is about the TOFU aspect of Gemini. TOFU stands for Trust-On-First-Use, and it's how Gemini handles TLS certificate verification. It's also how SSH handles security.
My favourite TOFU is either silken or medium firm. Sometimes I buy extra firm, because it's easier to cut and to work with, although I really dislike its crumbly texture when boiled in miso soup and i find it doesn't soak up flavour as well. Medium firm, when it's nice and hot and has been sitting in soup for a while, has a lovely smooth texture. Although, silken TOFU is my favourite because of its versatility: you can do appetizers like hiyayakko, and make a lot of tasty desserts like TOFU pudding.
I use Sunrise brand TOFU simply because it's the most acessible to me.
I like to put my TOFU in miso soup most of the time, although when I need to finish a big block it mostly will get fried and eaten with rice or salad as a good protein source. I've been meaning to try to make abuurage and meatless chicken nuggets with my leftovers too, so I hope that goes nicely. However you use your TOFU though, make sure you spend some time pressing and draining it to remove the excess water and allow it to better soak up the flavours you add to it. You can use a TOFU press for this, or simply a heavy plate and some paper towels.
