Nice to see Delta Chat mentioned, as I have a soft spot for the app. It's such a niche thing that it's hard to find more than a couple people to use it with, but in spite of this I just haven't been able to bring myself to delete the app because I love it so much. The latest release for Android which came out this past week seems to be the best version to date.
That being said, it's been a long time since I moved the Geminauts group to XMPP. Some may remember that it initially started on Delta Chat and was officially announced on the Gemini mailing list. At one point the Delta Chat group had around 20 Gemini users, which was impressive. Since moving to XMPP, the group has performed much better. (Now I see 32 users online. When did that happen!?)
Regarding Matrix, I have to admit that I prefer it to IRC most of the time. Since I discovered Matrix a couple years ago, I nearly stopped using IRC except via bridges. At the moment I'm using XMPP for that, so Biboumi bridges keep me in the one or two IRC channels I still care to be in.
One thing I don't like about Matrix is that room history is kept on the server forever. As a user, you tend not to notice or care about this, but when I force myself to think about it, I can't convince myself to like that. Better then to be on IRC and let your messages pass on to oblivion assuming nobody is logging. I don't really ever want to read chats I had in the distant past, since they were never meant to be anything other than ephemeral.
At this point, my attitude is something like:
In Matrix's defense, it gives you a nice amount of control over chats if you are the admin. This also includes restricting access to history somewhat and being able to retroactively delete unwanted messages in the chat.
