Sure thing. It's a MIME header. You can put anything in it. The main difference with TheProtocolThatShallNotBeNamed is that such line noise will just end up in /dev/null as there is no one to look, nor act, on it.
On the other hand, if you put such nice utm_term in the Gemini request or in a text/gemini link line... that would be another can of worms altogether :)
