- 1 1/2 kg chicken pieces
- 4 small onions, sliced
- 4 cloves garlic, minced
- 3 tbsp oil
- 1/2 ts cumin
- 1 1/2 ts ground coriander
- 1/2 ts turmeric
- 1 1/2 ts grated fresh ginger
- 1 1/2 ts dried red chilli
- peppers, crushed
- 1 1/2 ts back pepper
- 2 ts salt
- 2 ts (10g) butter
- 3 ts vinegar
- 1 1/2 tbls tomato paste
- 3 tbsp deicated coconut
- 3 tbsp lemon or lime juice
1. Saute the onions and garlic in the oil for about five minutes
2. Mix together the spieces, salt, butter and vinegar
3. Add to the onions with the tomato paste and mix well. Cook for
another 5 minutes
4. Add the chicken pieces, mix well and turn over several times
5. Cover and cook over a low heat until the chicken is tender. If the
mixture is too dry add a little water
6. Just before serving, stir in the desicated coconut and lemon or lime
juice
Serves 4-5. Serve with rice
