Rewatched Silence of the Lambs today. I just love how disturbing Hannibal Lecter is from the first shot. The slicked back hair, the menacing eyes. Just know you're about to see one of the scariest performances ever.

Rumor is that for the movie (like with Ms Marvel) they replaced his power with a more photogenic superpower: looking like Pedro Pascal.

YouTube recipes are an excellent way to learn, assuming you're watching decent YouTube channels. I find it's helpful to watch a few different people making the same thing to see how recipes vary a bit. A great simple starter book is Salt Fat Acid Heat. It's more theory-based than recipe-based and it will get you thinking about the right sorts of ideas. Another theory-based book is this one[1] (PDF) which is more explicit about teaching you how to make recipes.

In Ridley Scott's world androids run on milk, not oil. It's ridiculous to think of milk being stored in boobs. What a ludicrous idea.

Instead of putting a lid on and simmering for one minute, leave the lid off and boil for a few minutes until the water is pretty much gone. Then put the lid on and let it sit for about 10 minutes.

Usually people will rinse the potatoes first before soaking, in which case you do lose the starch, but if you squeeze out the water after shredding, and let that water sit for a little while, all the starch will sink to the bottom. You can pour the water off and re-add the original starch. It's way fussier than just adding new starch, and potato starch is cheap, but I like to reuse the original starch just for the sake of being thrifty.
