Pacific Rim offers quite a few. If you don't mind a drive the Local Epicurean in GR does more general cooking classes- I did one on sauces a few years ago there and had a blast

The Ayurvedic Wellness Center has them regularly. The space is beautiful, and the food is healthy and delicious. The chef that runs the course posts recipes on their blog so you could try a few out beforehand to see if it's your vibe. Good luck!

if you get in touch with the raddisson, they used to have cooking classes hosted at zazio’s (it’s now called something else) by their head chef. small group like 6-10 people, multiple live camera angles and they give instruction/educstion and then you get to eat the meal. it’s less hands-on and more of a fancy group dinner event. that’s all i know about, sorry!
