I like the new UI because of its more modern design choices.I still use new.reddit, because some moderation tools are not quite bug free.
You could make use of old.reddit and the RES Addon and customize it to your liking.

I wish Reddit devs weren't brainlets & actually let us customize the UI modularly, such as color scheme of the UI (for one, the new new UI is darker than the old new UI, which is a hindrance to some etc), maybe some extra functions to rescale the sizes of some of the feed boxes etc.
