Apparently, wound healing stimulates massive cell division in young fruits. Cells close to the epidermis of the fruit begin to divide from mother cells, and the periderm starts to fill in. Any necrotic tissue that has been formed by the fruit sloughs off as the cells push them off.

Wound depth, microbial infection, fruit age, and post-harvest conditions play roles in the speed and grade of wound healing, which varies from very little cell growth to nearly complete resuscitation of the periderm.
