I mean there are coal mines in Romania keeping steam locomotives going this way, I can’t imagine it’s that difficult to keep an in-production plane going.

If you own 20 planes and are willing to scrap 3-4 for parts, take higher risks with safety and employ many skilled workers to adapt and keep shit running then you can keep a good number flying.
The point wasn't to instantly stop all flights, that's too hard to do. The point was to spread Russia's assets and resources out so they have more problems and less people free to deal with the war effort.
Same with the depletion of their military stockpiles, trade sanctions on basic materials and reduction in oil sales etc etc. Spread them thin enough and then its a matter of slowly bleeding them dry and watching the gradual collapse take effect. Ramp up the cost by focussing on their high end assets too such as their ships, air defence and aircraft too and the trajectory for the war is downhill for them.
The whole idea is likely to convince them to walk away rather than hang around for the eventual collapse. Sadly with their support for the alliance of buttholes and Trump's treasonous ass due to take office that may not happen any time soon. But at very least its gonna encourage Putin to accept partial victory instead of aiming to conquer everything.
