Mind transfer jutsu transfers her consciousness to the victim. when soul is sealed, its expected to seal the mind also (as mind is a part of soul, or the reverse can also be said).
So, unless she releases the jutsu before the sealing is completes, I expect her mind to be sealed away along with the soul.
If she releases the jutsu before the sealing is complete, the reaper death seal may not complete (I expect the person she possessed to be dead. But not the person she's trying to seal.

Hum, that's an interesting thought... I still think Ino would be the one to pay the price, because the will of the summoner is what seals the contract. You can't just offer someone else's soul who has no will to it, in my understanding.

I feel like it would happen the same thing that happened in one of the Hellraiser movies, when a psychiatrist tried to use a patient to open the puzzle box.
The Cenobites said something to the effect of "it's not hands that summon us, but desire."
Probably the Shinigami would be after the person who actually summoned them, not the husk.

While she is possessing someone and they take damage she too also take equal amount of damage, so yea probably.
The way I see it the jutstu uses her literal soul to take over someone body.

That's a nice thought, and we don't know exactly what transfers, other than injuries. We don't know what her "consciousness" entails and whether the soul is supposed to be a part of that or something separate.
Another scenario is: if Ino transfers to a body, then poisons said body, does the poisonous substance somehow travel to her body too? Because if not, that'd be a great way to use her technique offensively (bonus because she is a poison specialist).

What would happen if she used her clan jutsu on Danzo shimuro or anyone and forced danzo to use his jutsu to control some rendom child into summoning Shinigami.
Whose soul would Shinigami take? Now that we have middle person. And Ino's chakra isn't connected to summoner.

Technically if Ino would transcribe second part of that jutsu, she could just switch bodies like a bodysnatcher, but since she fine as hell, I see no reason to switch xD.

Shinigami takes soul as payment, therefore soul who summoned him will become payment while body will act as 'seal' (one that was left on Sarutobi body)

It would be the soul of the body, after all, her soul does not leave the body, it is the mind that is sent to the other body and this causes her body to lose consciousness
