IRCC you can't delete Wiki pages, but you can de-list them and/or make it Moderator-only so it doesn't become visible to your community.

Correct... you do that in the "settings" page for the wiki page, example for the index page: https://www%5C.reddit.com/r/[1]<your sub>/wiki/settings/index
