I do think spices make it much more attainable but what 15 different spices are you using to cook a single curry lmao

The Thai green curry paste recipe I use has 11 different plants (12 if you count the two kinds of chilli) in it. Add a few vegetables to it, and you're pretty much there.

Looking at most curry recipes I have saved, they all have 10+ plants without adding veg, including spices & aromatics.

Cumin, coriander, chilli, fenugreek, garlic, ginger, curry, black pepper, turmeric, paprika, cardamom, nutmeg - here's the pretty common 12 of them

Some add cinnamon, cloves, white pepper, carom

And that's just the Indian/ Pakistani currys, you have a whole other ball game with Thai
