Barley soup in Switzerland is often "Büdner Gerstensuppe", with ham and bacon in it. I like the vegetarian spring variant.
Roast the pot barley for a bit.
Add some oil and the onions, fry for a bit.
Add fennel, fry some more.
Add add carrots and fill it up with water until the vegetables are covered plus some extra for the peas. Bring to a boil and let it boil softly for 20 min.
Add the green peas. If you add them too early they lose their fresh green colour. Keep boiling softly for another 10 min.
Add sour cream, lemon juice, salt and pepper to taste.
About 467 kcal per person.
