Pannukakku (Finnish pancake)

A light, fluffy pancake from Finland.

Mix all the dry ingredients together. Whisk eggs in a bigger bowl and add milk. Add dry ingredients to eggs and milk mix. Add cooled off melted butter. Let the dough puff up until the oven is ready. Pour the pancake batter baking tray lined up with parchment paper or silicone baking mats. Make sure the amount of the dough is fairly thin. If necessary, divide it into multiple baking trays. Bake the pancake in the oven at 435 F for about 30 minutes or until the pancake is light brown on the surface. Cut the pancake and serve in addition to jam, sugar, maple syrup, blueberry butter, etc.
