So I clicked on that “Custom” button in iTunes for the encoding rate. I used to have it set to 160 kbps. Apparently this meant CBR. The new dialog offered VBR, various quality settings, and so on. So I started googling and once again I was told that LAME was the only encoder to use. But... I have a Mac! I like iTunes!
Well, it turns out that there is a LAME bridge for iTunes! Which I installed. And now I use `--alt-preset standard` *understanding as little as before*, but feeling much better about it.
LAME rocks!! :D
